Handy link. Thanks! By canned, you mean "not fresh"? I'm positive Goode Co. doesn't use fresh, just based on texture, which means they used pickled. I'm guessing jarred would work as well as canned. Maybe better because they're generally a higher-quality pepper. Actually, you can get sweet pickled jalapeños. Those might be extra good in the bread...
